Spicy Cajun Beef Burger

Cajun-spiced beef with a real cayenne kick, melted light cheddar and a smoky yoghurt sauce that cools the edges without dulling the heat. Pickled jalapenos pile on for anyone who wants it hotter still.

Method

  1. Make the patty meat.

    Crack the egg into a large bowl and add the flour, smoked paprika, cayenne, onion granules, garlic puree, thyme, oregano, salt and pepper.

    Whisk to a loose paste.

    Add the beef mince.

    Mix with your hands until the spice paste runs all the way through and the meat holds together.

    Do not overwork it.

  2. Form the patties.

    Divide into three and shape into patties a little wider than your buns.

    Press a shallow dip into the middle of each so they cook flat.

    Raw patties freeze well at this point. Layer them between parchment and freeze for up to 1 month.

  3. Make the sauce.

    Stir the yoghurt, chipotle paste, lime juice and salt together in a small bowl.

    Taste and add more chipotle if you want more smoke.

    Chill until you build.

  4. Cooking.

    Heat the oil in a heavy pan or griddle over medium-high.

    Cook the patties for 5 to 6 minutes on the first side without moving them, so a crust forms.

    Flip, lay a slice of cheddar on each patty, and cook another 4 to 5 minutes until the cheese slumps and the beef is cooked through.

  5. Warm the buns.

    Warm the buns in the same pan, cut side down, for the last 30 seconds.

  6. Assembly and serving.

    Spread chipotle sauce on both bun halves.

    Stack lettuce, tomato and red onion on the base, then the patty, then the jalapenos.

    Close the bun.

    For a lighter build, skip the bun and wrap the patty in two big lettuce leaves.
