Prawn Arrabbiata

Garlic and chilli flakes bloomed hot in oil, simmered down with tomatoes, then tossed through spaghetti with prawns that go in just long enough to turn pink. Lemon and parsley keep it sharp against the heat.

  • 300graw peeled prawnsone bag
  • 225gspaghetti or linguinedry weight
  • 2 tbspolive oil
  • 4 clovesgarlic, thinly sliced
  • 1½ tspdried chilli flakesadjust to taste
  • 400gchopped tomatoesone tin
  • 1 tbsptomato puree
  • 1lemon, zestedjuice optional, to finish
  • 20gfresh parsley, choppeda generous handful
  • salt and black pepperto taste
  • 10 ozraw peeled shrimpone bag
  • 8 ozspaghetti or linguinedry weight
  • 2 tbspolive oil
  • 4 clovesgarlic, thinly sliced
  • 1½ tspcrushed red pepper flakesadjust to taste
  • 15 ozcrushed tomatoesone can
  • 1 tbsptomato paste

Method

  1. Cook the pasta.

    Bring a large pot of salted water to the boil and cook the spaghetti according to pack instructions until al dente.

    Reserve a mugful of pasta water before draining.

  2. Make the sauce.

    While the pasta cooks, heat the olive oil in a large, deep pan over medium-low heat.

    Add the garlic and chilli flakes and cook for 1 to 2 minutes, swirling the pan often, until the garlic softens and the oil turns fragrant.

    Keep the heat low here, burnt garlic turns bitter fast.

    Stir in the tomato puree and cook for 1 minute to deepen its colour.

    Add the chopped tomatoes, season with salt and pepper, and bring to a simmer.

    Cook for 10 to 12 minutes, stirring occasionally, until the sauce has thickened slightly and no longer tastes raw.

  3. Cook the prawns.

    Turn the heat up to medium and add the prawns to the sauce.

    Cook for 2 to 3 minutes, turning once, until they turn pink and opaque all the way through.

    Overcooked prawns turn rubbery fast, so pull them the moment they curl and firm up.

  4. Combine and serve.

    Add the drained pasta to the pan along with a splash of the reserved pasta water.

    Toss to coat, loosening the sauce with more pasta water if it looks tight.

    Remove from the heat, stir through the lemon zest and most of the parsley, and taste for seasoning.

    Divide between three bowls and scatter over the remaining parsley.
