- 2high-protein pizza bases (approx 100g each)or high-protein wraps as a base swap
- 40gndujamodest layer, it is potent
- 120glight mozzarella, grated or tornpart-skim
- 100gpassatathin layer, not a thick sauce
- 1 clovegarlic, mincedstirred into the passata
- 1 tspolive oilbrushed on the crust edge
- 1 tbsphot honeyshop-bought, or honey plus a few drops of hot sauce
- fresh basil leavesto finish
- black pepperto taste

- 4 ozlight mozzarella, grated or tornpart-skim

Method
Heat the oven.
Put a baking tray or pizza stone in the oven and heat to its highest setting, ideally 240C (fan) or above.
Let it heat for at least 10 minutes so the tray is properly hot when the bases go on. That blast of heat from below is what stops a high-protein base going soft in the middle.
Make the sauce.
Stir the garlic into the passata and season with black pepper.
Top the pizzas.
Lay the pizza bases out and brush the exposed edge with olive oil.
Spread a thin layer of passata over each base, leaving a small border.
Dot small pieces of nduja evenly over the sauce. Keep it sparse, it renders and spreads a lot of heat as it melts.
Scatter the mozzarella over the top.
Bake.
Slide the pizzas onto the hot tray or stone and bake for 10 to 12 minutes, until the cheese is bubbling and the crust edge is browned.
Finish and serve.
Pull the pizzas out and drizzle the hot honey over immediately while they are still hot, so it runs slightly into the melted cheese.
Scatter over fresh basil and slice.
Serve one pizza per person.
