Method
Prep the oven.
Preheat the oven to 190°C (375°F, fan 170°C).
Prepare the apples.
Toss the sliced apples with the lemon juice, 2 tablespoons of maple syrup and the cinnamon in a 20x20cm baking dish, spreading them into an even layer.
Make the crumble topping.
In a separate bowl, mix the oats, flour or ground almonds, melted butter, remaining maple syrup, pecans and salt until it clumps into coarse crumbs.
Assemble.
Scatter the crumb topping evenly over the apples, right to the edges of the dish.
Bake.
Bake for 30 to 35 minutes, until the topping is golden and the apples are bubbling at the edges.
Rest before serving.
Rest for 10 minutes before serving, the juice thickens as it sits rather than running across the plate.
