- 500gbeef mince, 5% fatone pack
- 200glean cooking chorizoskinned and chopped
- 400gtinned kidney beansdrained and rinsed
- 400gtinned black beansdrained and rinsed
- 1 tinchopped tomatoes (400g)
- 2 tbsptomato puree
- 1 largeonion, diced
- 1 redpepper, diced
- 3 clovesgarlic, crushed
- 1½ tbspchipotle pastesee Notes
- 2 tspground cumin
- 2 tspsmoked paprika
- 1 tspdried oregano
- 300mlbeef stockone cube
- 1 tspolive oil
- salt and black pepperto taste
- 1¼ lblean ground beef, 95%one pack
- 7 ozlean cooking chorizoskinned and chopped
- 15 ozcanned kidney beansdrained and rinsed
- 15 ozcanned black beansdrained and rinsed
- 14½ ozcanned diced tomatoes
- 2 tbsptomato paste
- 1 largeonion, diced
- 1 redbell pepper, diced

- 2 tspsmoked paprika
- 1 tspdried oregano
- 1¼ cupsbeef stockone cube

Method
Cook the chorizo.
Heat the oil in a large heavy pot over medium-high.
Add the chopped chorizo and cook for 3 to 4 minutes until it colours and its red oil starts to render out.
This oil is your fat and flavour base, so leave it in.
Brown the mince.
Add the beef mince, break it up and brown it fully in the chorizo oil, around 6 minutes.
Do not rush this.
Real colour on the meat is where the depth comes from.
Soften the veg.
Add the onion and red pepper.
Cook for 5 minutes until softened, then stir in the garlic for a minute more.
Build the spice base.
Stir in the chipotle paste, cumin, smoked paprika and oregano.
Cook for a minute so the spices bloom and coat the meat, then add the tomato puree and cook it out for another minute.
Add the liquid.
Pour in the chopped tomatoes and beef stock, then add both tins of drained beans.
Stir well and bring to a simmer.
Simmer.
Drop the heat to low and simmer uncovered for 25 to 30 minutes, stirring now and then, until thick enough that a spoon dragged across the base leaves a brief trail.
Season with salt and black pepper to taste.
Serve.
Serve a quarter of the pot per person, hot, in a bowl.
The flavour deepens overnight if you batch it.
