Chocolate Chia Pudding

Chia seeds swell in cocoa-dark milk overnight and turn the jar into a spoonable pudding on fridge time alone, no cooking required. Set it the night before and it's thick and ready by morning.

  • 400mlmilk
  • 30gcocoa powderunsweetened
  • 30gvanilla or chocolate protein powder1 scoop, about 30g
  • 2 tbsphoney or maple syrup
  • ½ tspvanilla extract
  • pinch of saltto taste
  • berries or dark chocolate shavingsto serve, optional
  • 2 ozchia seeds
  • 1 2/3 cupmilk
  • ¼ cupcocoa powderunsweetened

Method

  1. Make the base.

    Whisk the cocoa powder, protein powder, honey, vanilla and salt into the milk in a jug or bowl, until fully smooth with no lumps of cocoa or powder left.

    Stir in the chia seeds until evenly distributed.

  2. Rest and set.

    Let it sit for 5 minutes, then whisk again. This is the step that stops the chia clumping and settling into an uneven layer once it sets.

    Divide between two jars, cover, and chill for at least 4 hours, ideally overnight, until it sets to a thick, spoonable pudding.

  3. Serve.

    Stir before serving. Top with berries or chocolate shavings if using.
