Chocolate Avocado Protein Mousse
Ripe avocado blended hard with melted dark chocolate turns properly smooth, the same fat that reads savoury in guacamole reading rich once the cocoa takes over. Chilled until it firms into something you spoon rather than drink, dense and properly chocolatey.

- 2avocados, ripeabout 400g flesh
- 30gdark chocolate, melted
- 30gcocoa powderunsweetened
- 30gvanilla or chocolate protein powder1 scoop, about 30g
- 60mlmilk
- 2 tbspmaple syrup or honey
- 1 tspvanilla extract
- pinch of saltto taste
- 2avocados, ripeabout 14 oz flesh
- 1 ozdark chocolate, melted
- ¼ cupcocoa powderunsweetened
- 1 scoopvanilla or chocolate protein powderabout 1 oz
- ¼ cupmilk
- 2 tbspmaple syrup or honey
- 1 tspvanilla extract
- pinch of saltto taste

Method
Melt the chocolate.
Melt the dark chocolate in short bursts in the microwave or over a pan of simmering water.
Let it cool for a minute so it doesn't cook the avocado.
Blend the mousse.
Halve the avocados and scoop the flesh into a food processor or blender.
Add the melted chocolate, cocoa powder, protein powder, milk, maple syrup, vanilla and salt.
Blend for a full 2 minutes, scraping down the sides at least once.
Keep going until it's completely smooth with no green streaks, this is where lumps of avocado hide.
Chill and serve.
Divide between four bowls or jars and chill for at least an hour, this is what turns it from a thick drink into a mousse you spoon.
