Method

  1. Cook the chicken.

    Pat the chicken dry and rub with the salt, pepper, garlic powder and smoked paprika.

    Heat the olive oil in a pan over medium-high and cook the chicken for 6 to 7 minutes a side, until it hits 75C in the middle.

    Rest for 5 minutes, then slice.

  2. Make the croutons.

    Melt the butter in a separate pan over medium heat with the garlic.

    Add the cubed sourdough and toss until every side picks up colour, 5 to 6 minutes.

    Season with a pinch of salt and tip onto kitchen paper.

  3. Make the dressing.

    Whisk the garlic, mayonnaise, Dijon, Worcestershire, anchovy paste and lemon juice together until smooth.

    Fold in the parmesan, season, then loosen with the olive oil until it coats a spoon without running off it.

  4. Assemble the salad.

    Toss the romaine through most of the dressing in a large bowl.

    Divide between four bowls, top with the sliced chicken, croutons and shaved parmesan, then finish with the remaining dressing.
