  • 357gbeef stir-fry strips1 pack
  • 2packs shirataki/konjac noodles, 250 g each, rinsed and drained
  • 250gbok choy/pak choi, sliced lengthways
  • 250gmushrooms, sliced
  • 60gspring onions, sliced
  • 30mlextra virgin olive oil2 tbsp
  • 15mltoasted sesame oil1 tbsp
  • 12gfresh ginger, finely grated
  • 8ggarlic, finely grated or crushed2 cloves
  • 30mltamari or soy sauce2 tbsp
  • 900mlbeef stock
  • 1 pinchblack pepper
  • 12 ozbeef stir-fry strips
  • 2packs shirataki or konjac noodles, 8.8 oz each, rinsed and drained
  • 1pack bok choy, sliced lengthways9 oz
  • 8 ozmushrooms, sliced
  • 1 bunchspring onions, sliced
  • 2 tbspextra-virgin olive oil
  • 1 tbsptoasted sesame oil
  • 1 tbspfresh ginger, finely grated

  • 2 tbsptamari or soy sauce
  • 4 cupsbeef stock
  • 1 pinchblack pepper

Method

  1. Rinse and drain the shirataki noodles well. Put them into a dry frying pan over a medium heat for 2 to 3 minutes to drive off excess moisture, then set aside.

  2. Heat 15 ml (1 tbsp) of the olive oil in a large saucepan or deep frying pan over a high heat.

  3. Add the beef stir-fry strips and cook very quickly for 1 to 2 minutes until just browned at the edges. Transfer to a plate.

  4. Lower the heat to medium. Add the remaining 15 ml (1 tbsp) olive oil, the mushrooms, ginger, and garlic. Cook for 2 minutes until fragrant.

  5. Pour in the beef stock and tamari or soy sauce, then bring to a gentle boil.

  6. Add the pak choi and simmer for 2 to 3 minutes until just tender.

  7. Add the shirataki noodles and toasted sesame oil, then simmer for 1 minute until fully hot.

  8. Divide the noodles, broth, mushrooms, and pak choi between 4 bowls.

  9. Top with the beef and finish with the spring onions and a little black pepper.
