Apple and Cinnamon Overnight Oats

Grated apple and warm cinnamon stirred through oats and yoghurt, then left overnight to turn thick and spoonable. The everyday jar, properly good without tasting like dessert.

  • 250mlsemi-skimmed milk
  • 100gGreek yoghurt, 2%, or skyr
  • 30gvanilla protein powderone scoop
  • 1apple, grated (skin on)
  • 1½ tspground cinnamon
  • 1 tbspmaple syrup
  • 2 tbspchia seeds
  • extra grated apple and a pinch of cinnamonto serve, optional

  • 1 cup2% milk
  • ½ cupGreek yoghurt, 2%, or skyr

Method

  1. Mix the base.

    Grate the apple, skin on, straight into a mixing bowl or jug. Leaving the skin on keeps the extra fibre and it softens fully overnight, so you won't notice it in texture.

    Add the oats, milk, yoghurt, protein powder, cinnamon, maple syrup and chia seeds. Stir until the protein powder is fully worked through and no dry pockets remain.

  2. Chill overnight.

    Divide between two jars, seal, and refrigerate for at least 4 hours, ideally overnight. The apple keeps releasing moisture as it softens, which is part of what sets the jar's texture alongside the chia.

  3. Finish and serve.

    Stir before eating. Top with a little extra grated apple and a pinch of cinnamon if you want more of both.
