  • 1 tspdried oregano
  • ½ tspred pepper flakesmore to taste
  • 2 cupsvegetable broth
  • 1 tbspolive oil
  • salt and black pepperto taste

Method

  1. Prep the peppers.

If your peppers are not already roasted, halve and deseed them, then grill skin-side up for 10 to 12 minutes until blackened and soft.

Steam under a bowl for 5 minutes, peel off the skins and chop.

Jarred roasted peppers work straight from the jar.

  2. Soften the veg.

Heat the oil in a large pot over medium heat.

Cook the onion for 5 minutes until soft, then add the garlic, mushrooms and a pinch of salt.

Cook for 6 to 8 minutes until the mushrooms release their water and it cooks off.

This step builds the savoury base, so let them get some colour.

  3. Build the spice base.

Stir in the cumin, smoked paprika, oregano and chilli flakes.

Cook for 1 minute until they smell toasted, then stir in the tomato puree.

  4. Add the liquid.

Add the tomatoes, stock, lentils, all three drained beans and the chopped roasted peppers.

    Bring to a simmer.

  5. Simmer.

Simmer uncovered for 25 to 30 minutes, stirring now and then, until the lentils have broken down and the sauce is thick enough to hold a spoon-trail across the pot.

If it tightens too far before the lentils soften, add a splash more stock.

  6. Finish and serve.

Taste and adjust for salt, pepper and heat.

Serve a quarter per person, with rice, in a bowl on its own, or over a baked potato.
