Method
Mix the dry ingredients.
Put the oats, protein powder, milled flax and salt in a large bowl and stir to distribute them evenly. Doing this before the wet ingredients go in stops pockets of dry powder ending up in the finished balls.
Make the dough.
Add the peanut butter, honey and vanilla extract. Mix with a spatula or your hands until it starts to come together into a dough.
If the mix feels dry and won't hold when pressed, add the water a tablespoon at a time. Protein powder absorbs moisture differently jar to jar, so this step is about feel, not a fixed number.
Shape the balls.
Once the dough holds together when squeezed, roll it into 16 balls, about a tablespoon each. Wet or oiled hands stop the peanut butter sticking to your palms.
Chill and store.
Arrange the balls on a plate or tray lined with baking paper and chill in the fridge for at least 30 minutes. Chilling firms the fat in the peanut butter so the balls hold their shape instead of squashing in a bag.
Transfer to a sealed container once firm.
