Method

  1. Prep the chicken.

Open the chicken out flat and trim any loose fat.

Cut each breast into two or three wide strips.

  2. Marinate the chicken.

In a bowl, mix the 2 tablespoons yoghurt, olive oil, the zest and half the lemon juice, two grated garlic cloves, oregano, paprika, cumin, salt and pepper.

Turn the chicken through it and leave for 15 minutes while you prep the rest.

  3. Make the tzatziki.

Grate the cucumber, then squeeze it hard in your hands to drive out the water.

Stir it into the 200g yoghurt with the last garlic clove grated in, the remaining lemon juice and a pinch of salt.

    Taste and adjust.

  4. Cook the chicken.

Heat a griddle pan or grill to high.

Lay the chicken on and cook for 4 to 5 minutes a side, until charred at the edges and cooked through.

Rest for a couple of minutes, then slice into strips.

  5. Warm the pitas.

Warm the pita breads on the dry griddle for 20 seconds a side until soft and pliable.

  6. Assembly and serving.

Lay a pita on each plate.

Spread with tzatziki, pile on lettuce, tomato and red onion, then the sliced chicken.

Spoon over more tzatziki, fold and serve one to each person.
