  • ¼ cup2% Greek yogurt

Method

  1. Cook the rice.

Cook the rice in plenty of salted water per the packet.

    Drain and keep warm.

  2. Season the chicken.

Toss the chicken strips with the smoked paprika, cumin, garlic powder and chilli powder, and a pinch of salt.

  3. Cook the chicken and vegetables.

Heat the oil in a large skillet over high heat.

Add the chicken and cook for 5 to 6 minutes until coloured and cooked through, then lift out onto a plate.

Drop the peppers and onion into the same pan and cook for 5 to 6 minutes, leaving them alone between stirs so they take on char at the edges.

Return the chicken to the pan, toss with the vegetables for 1 minute, then take off the heat.

  4. Make the lime yoghurt.

Stir the yoghurt with the lime juice, coriander and a pinch of salt.

  5. Assembly and serving.

    Spoon rice into each bowl.

Pile the chicken and peppers on top, add a spoon of salsa, and finish with the lime yoghurt.
