  • 1 largecarrot, juliennedabout 3.5oz
  • 5½ ozfrozen edamame, podded
  • 2scallions, sliced
  • 1 tbspsesame seeds

Method

  1. Make the sauce.

Whisk the soy sauce, honey, rice vinegar, sesame oil, garlic and ginger together in a small bowl. Set aside.

  2. Cook the rice.

Cook the rice according to the pack instructions and keep warm.

  3. Cook the chicken.

Heat the vegetable oil in a large pan or wok over medium-high heat. Add the chicken and cook for 6 to 7 minutes, turning occasionally, until it's browned and mostly cooked through.

Pour in the sauce and let it bubble and reduce for 2 to 3 minutes, stirring so the chicken picks up a sticky coat. Take off the heat once the sauce has thickened enough to cling to the meat rather than pool in the pan.

  4. Prep the vegetables.

While the chicken cooks, steam or roast the broccoli for 6 to 8 minutes until tender-crisp. Boil the edamame for 3 minutes according to the pack, then drain.

  5. Assemble the bowls.

Divide the rice between four bowls. Top with the glazed chicken, broccoli, carrot and edamame. Scatter over the spring onion and sesame seeds.
