  • 1½ tspground cinnamon
  • ½ tspsalt
  • 300gGreek yoghurt, 2%
  • 3eggs
  • 400mlmilk, semi-skimmed
  • 60mlhoney
  • 1 tspvanilla extract
  • 250gfrozen mixed berriesdon't thaw first
  • 3 cupold-fashioned rolled oats
  • 1 scoopvanilla whey protein powder
  • 1 tspbaking powder
  • 1½ tspground cinnamon
  • ½ tspsalt
  • 1¼ cupGreek yoghurt, 2%
  • 3eggs
  • 1 2/3 cup2% milk
  • ¼ cuphoney
  • 1 tspvanilla extract
  • 1½ cupfrozen mixed berriesdon't thaw first

Method

  1. Prep for baking.

Preheat the oven to 180C (350F) and line a 20cm by 25cm baking dish with parchment.

  2. Mix the dry ingredients.

In a large bowl, mix the oats, protein powder, baking powder, cinnamon and salt until evenly combined.

  3. Mix the wet ingredients.

In a separate bowl, whisk the yoghurt, eggs, milk, honey and vanilla until smooth.

  4. Combine the batter.

Pour the wet mix into the dry mix and stir until just combined. Overmixing here won't ruin it, this batter is forgiving.

Fold in the frozen berries straight from frozen. Adding them frozen rather than thawed keeps them from bleeding colour through the whole batter before it even hits the oven.

  5. Bake the bars.

Pour into the prepared dish and smooth the top level.

Bake for 26 to 30 minutes, until the top is golden and a knife inserted in the centre comes out clean, or with just a few moist crumbs from the berries.

  6. Cool and cut.

Cool in the dish for at least 30 minutes before lifting out and cutting into 9 bars. This is a softer bake than a flapjack, so it needs the full cool to hold a clean cut.
